Pumpkin Apple Cupcakes with Maple Cinnamon Frosting

Cupcakes:
1 medium apple (peeled, cored and diced)
1 boxed yellow, or white, or spice cake mix
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground clove
1 1/2 cups canned pumpkin (not pumpkin pie mix)
1 1/3 cups water

Frosting:
1 16-ounce container cream cheese icing
2 tablespoons light maple syrup
1/2 teaspoon ground cinnamon

1. Preheat the oven to 350 and line two cupcake pans with paper liners.

2. In a small microwave-safe bowl, microwave the apple pieces on high about 1 minute or until tender. Set aside.

3. In a large mixing bowl, combine the cake mix, cinnamon, nutmeg, clove, pumpkin and water, then beat with an electric mixer on high speed 2 minutes. Fold in the cooked apple pieces.

4. Spoon the batter into prepared cupcake pan. Bake the cupcakes about 18 to 20 minutes or until inserted toothpick comes out clean.

5. Meanwhile, in a small mixing bowl, stir the cream cheese icing, maple syrup, and cinnamon until well blended. Allow cupcakes to cool completely before frosting. Devour greedily.

The 25 List

So I got this idea from this cute girl, Courtney's, blog (view here). Every year she makes a list of the things she wants to do or accomplish. I thought it was fun, so since today is my half birthday I decided to make one. I may not have time to do these all in 6 months, but we'll see how far I can get.

This is my 25 list.

1. run a half marathon.

2. buy a bicycle.
either a road bike or just a beach cruiser. i just want a bike and i'm going to get one.

3. finish all of my applications and get into nursing school.

4. go to three new cities
(outside of utah)

5. FINALLY get a new comforter.

6. re-organize and clean out my itunes.

7. decorate my living room.

8. finish my 'sex and the city' dvd collection

9. read three "meaningful" books.

-1 true story
-1 historical book

10. start my journal again

11. learn to cook something new every month.

12. learn to golf.

13. go to boston to visit jenn.

14. clean out the boxes underneath my bed.

15. pay off my credit card.

16. swim with a dolphin.

17. go to costa rica.

18. go to three concerts of bands/people i have never seen before.

19. learn to country dance.

20. see a baseball game in a stadium other than angels stadium.
(or dodgers or padres)

21. do a mud run.

22. complete a do-it-yourself piece of furniture.
as in i re-finish it etc...not build it from ikea :)

23. go to a fashion show.

24. buy a pair of christian louboutin heels.

25. make a scrapbook.

Todd's Wedding

So, my good friend Todd got married. Kind of weird because I haven't been able to see Todd much that last year or two, but we used to be best friends. I've never really seen him date a girl seriously, but he seems sooo happy. It made me really happy to see him like that.
His wedding was so cute. I love weddings! I love to see how everybody decides to plan theirs differently and how everything turns out.
Anyway, it was really nice to go and see him. I'm sad his eyes are closed in this picture, but it was the only one I got!

After the wedding Jake and I went up to Salt Lake and went to Cafe Molise. It's an Italian Restaurant downtown. I highly recommend in. So yummy!

I liked the dress, especially from the back, but her hair would have looked better up. Then you would have been able to see the shoulders and the low back better.

This is a weird outfit to me, but she always looks good, and I think she looks better than the people that I picked for worst dressed. She's still pulling it off.

I LOVE this dress. So pretty. But I don't know if I love her plain hair, and something about her makeup isn't making me love the whole look.

I think she looks the best I've seen her look, but its not my favorite color dress. She looks so tiny.

I love the color and the lace of the dress, it's just not something that I would picture for the Emmy's. She looks gorgeous though.

I think she looks really good for her. The dress looks good too, but apparently she walked around all night with it on crooked...does that surprise anybody?

I think she is so beautiful. I almost put her in best dressed, but I decided to only pick five so I didn't...I love the color of the dress. Not quite red like everyone else's that night. Looks great on her.

She looks like she is 5 years old or something. And I hate that color and the sash across the middle. Just not a good choice all around.

The color is really pretty, but it doesn't look like it fits her and it is really boring and casual. Also her hair looks like she threw it up at that last second and there are tons of flyaways. She can do a lot better.
